El dicho popular lo resume as\u00ed.<\/p>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>M\u00e1s all\u00e1 del refr\u00e1n, lo cierto es que solemos comer distintos alimentos seg\u00fan la hora del d\u00eda. Parte de esto es cultural, pero tambi\u00e9n <strong>hay evidencia cient\u00edfica<\/strong> que orienta qu\u00e9 conviene comer (y cu\u00e1ndo) para mejorar el rendimiento cognitivo, la salud metab\u00f3lica, el peso corporal o la performance deportiva.<\/p>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>Durante a\u00f1os, se debati\u00f3 si saltarse el desayuno era realmente da\u00f1ino. Hoy, la evidencia es clara: <strong>el desayuno importa<\/strong>.<\/p>\n<\/div>\n<h2>\u00bfPor qu\u00e9 importa desayunar?<\/h2>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>Comenzar el d\u00eda sin alimento tiene efectos medibles. La investigadora Lea Cahill, por ejemplo, encontr\u00f3 que desayunar reduce un 27% el riesgo de cardiopat\u00eda coronaria.<\/p>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>Pero<strong> no cualquier desayuno sirve<\/strong>: los desayunos ricos en grasas de manera habitual aumentan el riesgo de aterosclerosis.<\/p>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>El desayuno se considera la comida m\u00e1s importante del d\u00eda porque <strong>rompe el ayuno nocturno y aporta energ\u00eda<\/strong> y nutrientes clave para las horas siguientes.<\/p>\n<\/div>\n<h2>\u00bfQu\u00e9 conviene desayunar?<\/h2>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>Las preferencias var\u00edan enormemente entre culturas. Quien haya visitado Jap\u00f3n quiz\u00e1 vio el natto, una soja fermentada pegajosa y de sabor intenso que all\u00ed se consume por la ma\u00f1ana.<\/p>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>Aun as\u00ed, dentro de cada cultura suele haber cierta coherencia sobre qu\u00e9 alimentos se consideran \u00abde desayuno\u00bb.<\/p>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>Y de hecho, los h\u00e1bitos tambi\u00e9n cambian con el tiempo. En Occidente, los cereales fueron un cl\u00e1sico del siglo XX, pero hoy su presencia es m\u00e1s ambigua. <strong>El jugo de naranja, antes infaltable<\/strong>, en la actualidad ya no siempre se lo recomienda por su alto contenido de az\u00facar y baja fibra, aunque la naranja entera sigue siendo una excelente fruta rica en fibra y vitamina C. Del mismo modo, l<strong>os cereales pueden ser saludables si son integrales<\/strong> y se combinan con semillas, frutos secos o frutas.<\/p>\n<\/div>\n<h2>El consenso actual<\/h2>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>La evidencia apunta a un desayuno que sea:<\/p>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<ul>\n<li><strong>Alto en prote\u00ednas. <\/strong>Un alimento que aporta este nutriente son los huevos que mejoran la masa muscular y el rendimiento cognitivo. El yogur, en tanto, aporta prote\u00ednas de alta calidad y beneficia huesos, microbiota, peso, baja el riesgo de diabetes. Mientras que los quesos untables, elaborados por fermentaci\u00f3n (como el yogurt), suman prote\u00ednas y calcio.<\/li>\n<\/ul>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<ul>\n<li><strong>Rico en fibra.<\/strong> Podemos incluir frutas enteras, palta, panes integrales y semillas de ch\u00eda.<\/li>\n<\/ul>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<ul>\n<li><strong>Preferentemente s\u00f3lido.<\/strong> No es desayuno un mate o agua. Los s\u00f3lidos aumentan la saciedad y ayudan a regular la ingesta del resto del d\u00eda.<\/li>\n<\/ul>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>Y un dato curioso: un estudio dela Universidad de Harvard con 200.000 personas mostr\u00f3 que <strong>dos tazas de caf\u00e9 con cafe\u00edna al d\u00eda <\/strong>reducen a la mitad la tasa de suicidios, sugiriendo un leve efecto antidepresivo del consumo moderado de cafe\u00edna.<\/p>\n<\/div>\n<h2>Efectos del desayuno sobre la salud<\/h2>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>M\u00e1s all\u00e1 de la cultura, nuestros ritmos circadianos influyen en <strong>qu\u00e9 comemos y c\u00f3mo lo metabolizamos<\/strong>. Saltarse el desayuno se asocia con mayores niveles de glucosa en sangre, mayor resistencia a la insulina y riesgo de diabetes. Esto ocurre porque el ayuno prolongado eleva los \u00e1cidos grasos circulantes que generan lipotoxicidad porque interfieren con el metabolismo de la insulina.<\/p>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>Omitir el desayuno tambi\u00e9n <strong>aumenta el riesgo de obesidad y el riesgo cardiovascular<\/strong>, desregula hormonas clave del apetito.<\/p>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>Los ritmos circadianos tambi\u00e9n afectan nuestro estado de \u00e1nimo. Saltarse el desayuno aumenta el riesgo de sufrir ansiedad y depresi\u00f3n,<strong> eleva el cortisol<\/strong> (la hormona del estr\u00e9s), que a su vez sube la glucemia, empeora el sue\u00f1o y favorece la acumulaci\u00f3n de grasa abdominal.<\/p>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>Y no termina ah\u00ed. Foto Shutterstock.<\/span><span class=\"picture-open\"><button class=\"open-image\" aria-label=\"Open Image\"><\/button><\/span><\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>Interesante es que el ayuno prolongado <strong>afecta el metabolismo del calcio y la salud \u00f3sea<\/strong> pero tambi\u00e9n la actividad de los monocitos (c\u00e9lulas de defensa), los marcadores inflamatorios y la susceptibilidad a enfermedades inflamatorias, incluido el c\u00e1ncer. <\/p>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p><strong>La microbiota tampoco queda indemne<\/strong> de la omisi\u00f3n de esta comida: saltarse el desayuno altera la microbiota intestinal y favorece la inflamaci\u00f3n.<\/p>\n<\/div>\n<h2>Cambios en los h\u00e1bitos de desayuno<\/h2>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>Aunque se recomienda que el desayuno aporte<strong> entre 15% y 25% de las calor\u00edas diarias <\/strong>(aprox. 250\u2013500 kcal), entre el 18% y 25% de los adultos y hasta el 36% de los adolescentes, lo saltean.<\/p>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>Desayunar probablemente sea un <strong>marcador de estilo de vida saludable<\/strong>, m\u00e1s que un factor protector aislado. Pero tambi\u00e9n es una oportunidad: si desayunamos, tenemos una instancia m\u00e1s para incluir alimentos que no entrar\u00edan en una o dos comidas al d\u00eda.<\/p>\n<\/div>\n<div class=\"sc-45461e9c-0 eqiBeF container-text text-embed \">\n<p>El desayuno no es solo una costumbre cultural: <strong>es un momento fisiol\u00f3gicamente estrat\u00e9gico<\/strong>.
